August 4, 2016 (2015 Flashback)



It's hard to believe it, but a year ago I was taking a road trip from North Carolina to Oregon to start my new life as an NP. It's been a long, crazy year. I've learned so much and continue to learn every day.

Facebook has helped me stay connected to my friends on the other coast and everywhere in between. I've also been enjoying looking at Facebooks 'On this day' feature and seeing how my life has changed in the last couple of years.

Seeing the posts about my trip has also reminded me I intended to do some posts about eating vegan on my cross country trip.  I used Happy Cow's app and found so many treasures! Now that I have a bit more time I will try to recap using the magic of Facebook.

After a wild night of cocktails in Fredericksburg, I headed north but didn't make it very far because I was so tired. I mean really I don't think I drove 4 hours. But hey, a girl had just packed up her whole life in 9 days, I needed rest!

I spent the night in Bedford, PA where I finished my credentialing paperwork for my new job and applied for my DEA number online. The next morning I slept in and headed to lunch at The Green Harvest. Not a veg restaurant, but had good options. I went for the vegan house made chickpea burger with quinoa cranberry side salad.



After lunch and dropping off my paperwork to the post office, it was north to Ohio to meet up with my dear friend Wendy. We met in a small town the name of which I've forgotten. The point was friend time, not the food. We met at a little diner that was not exactly veg friendly. I think I had a plate of iceberg lettuce and some fries? No pic!

After some laughs and hugs, I took I-80 and made it to Indiana for the night. I remember having to drive longer than expected to find a hotel. But since I didn't plan day to day that kind of thing happens!

The theme of the trip was to see any sights I came across that drew interest, to take my time and enjoy the journey. This led to some fun experiences that I hope you will relive with me!
